Ingredients
Scale
1 cup Medjool dates, pitted
1 cup raw almonds
1/2 cup almond flour
1/4 cup fresh lemon juice
1 tablespoon lemon zest
1/4 teaspoon sea salt
2 tablespoons coconut oil, melted (optional, for binding)
Instructions
Line an 8×8 inch pan with parchment paper, leaving an overhang for easy removal.
In a food processor, pulse the raw almonds until they form a coarse, crumbly meal. Do not over-process into butter.
Add the pitted dates, almond flour, lemon juice, lemon zest, and salt to the food processor.
Process the mixture until it comes together into a sticky, uniform dough. If the mixture seems too dry, add the melted coconut oil one teaspoon at a time until it holds together when pressed.
Transfer the dough mixture to the prepared pan. Press the mixture down firmly and evenly using the back of a spatula or your fingers.
Place the pan in the freezer for at least 2 hours to set completely.
Lift the bars out of the pan using the parchment paper overhang. Slice into 12 or 16 squares.
Store the bars in an airtight container in the refrigerator.
Notes
For a firmer bar, chill the mixture for 30 minutes before pressing it into the pan.
If your dates are dry, soak them in hot water for 10 minutes, then drain them well before using.
You can substitute walnuts for almonds if you prefer a different nut flavor.
