Ingredients
Scale
1 1/2 cups graham cracker crumbs
1/4 cup packed light brown sugar
6 tablespoons unsalted butter, melted
1 cup finely grated carrot
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
8 ounces cream cheese, softened
1 cup powdered sugar, sifted
1 teaspoon vanilla extract
1/2 cup heavy whipping cream, cold
1/4 cup chopped pecans (optional, for topping)
Instructions
Prepare the crust: In a medium bowl, mix graham cracker crumbs, brown sugar, and melted butter until combined.
Press about 1 tablespoon of the crust mixture firmly into the bottom of 6 small serving cups or ramekins. Place cups in the freezer while you prepare the filling.
Mix the carrot layer: In a small bowl, combine the grated carrot, cinnamon, nutmeg, and ginger. Set aside.
Prepare the cheesecake filling: In a large bowl, beat the softened cream cheese until smooth. Gradually beat in the sifted powdered sugar and vanilla extract until fully incorporated.
In a separate bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
Assemble the cups: Spoon half of the cheesecake filling evenly over the chilled crusts in the cups. Top the filling layer with half of the spiced carrot mixture. Repeat with the remaining filling and carrot mixture, creating two layers of each.
Cover the cups loosely with plastic wrap and refrigerate for at least 4 hours, or until firm.
Before serving, top each cup with chopped pecans, if desired.
Notes
For the best texture, ensure your cream cheese is fully softened to room temperature before mixing.
You can substitute vanilla wafers for graham crackers for a different crust flavor.
Chill the cups for a minimum of 4 hours for the filling to set properly.
