Create perfect, high protein breakfast egg muffin cups using a muffin tin. These freezer friendly breakfast portions are great for meal prep eggs and reheat well for quick meals.

Ingredients

Scale
  • 12 large eggs
  • 1/4 cup milk or unsweetened almond milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked, chopped spinach
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked, crumbled bacon or diced ham (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Lightly grease a standard 12-cup muffin tin or use silicone liners for easy removal.
  2. In a large bowl, whisk the eggs, milk, salt, and pepper together until well combined and slightly frothy. This helps create a fluffy interior.
  3. Stir in your desired mix-ins, such as the chopped spinach, cheese, and bacon or ham. Distribute the mixture evenly among the 12 muffin cups, filling each about three-quarters full.
  4. To prevent rubbery texture, create a water bath: Place the filled muffin tin inside a larger baking pan. Carefully pour hot water into the larger pan until it reaches about halfway up the sides of the muffin tin.
  5. Bake for 20 to 25 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
  6. Carefully remove the muffin tin from the water bath. Let the egg bites cool in the tin for 5 minutes before removing them.
  7. For make ahead meals, cool completely before storing.

Notes

  • For the fluffiest texture, do not overfill the cups. The water bath (or steam method) is key to avoiding a rubbery result.
  • These keto egg bites freeze well. Place cooled bites on a baking sheet to freeze individually, then transfer to a freezer-safe bag for up to 3 months.
  • To reheat egg muffins, microwave them from frozen for 1 to 2 minutes, or thaw overnight in the refrigerator and microwave for 30 to 45 seconds.
  • Feel free to substitute vegetables like diced bell peppers or mushrooms; just make sure they are pre-cooked.
