Ingredients
Scale
1 box (15.25 oz) yellow cake mix
3 large eggs
1/2 cup vegetable oil
1 1/3 cups water
1/4 cup sour cream
1 teaspoon vanilla extract
1 bag (16 oz) white candy melts
1/4 cup heavy cream
Green candy melts
Black edible marker
Green edible marker
Assorted candy eyeballs
Cake pop sticks
Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large bowl, combine the cake mix, eggs, vegetable oil, water, sour cream, and vanilla extract. Beat on medium speed for 2 minutes until well combined.
Pour the batter into the prepared baking sheets.
Bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cakes cool completely.
Once cooled, crumble the cakes into a bowl.
In a microwave-safe bowl, melt the white candy melts in 30-second intervals, stirring between each, until smooth. Stir in the heavy cream until fully combined.
Add the melted white candy coating to the crumbled cake and mix until it forms a dough-like consistency.
Roll the cake mixture into 1-inch balls. Insert a cake pop stick into each ball.
Chill the cake pops in the refrigerator for 15 minutes.
Melt the green candy melts in 30-second intervals, stirring between each, until smooth.
Dip each cake pop into the melted green candy, ensuring it is fully coated. Let excess drip off.
While the green coating is still wet, attach two candy eyeballs to each cake pop.
Use the black edible marker to draw small pupils onto the candy eyeballs to give them a more monstrous look.
Use the green edible marker to add veins or other details to the eyeballs if desired.
Place the decorated cake pops on parchment paper to set completely.
Notes
Ensure your cake pops are fully chilled before dipping for a smoother coating.
Work quickly when dipping to prevent the candy coating from setting too fast.
You can use different colored candy melts for a variety of monster eyeballs.
