Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 cups mixed berries (fresh or frozen)
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine the flour, rolled oats, brown sugar, and salt.
  3. Pour the melted butter over the dry ingredients and mix until well combined and crumbly.
  4. Press about two-thirds of the crumble mixture evenly into the bottom of the prepared baking pan.
  5. In a separate bowl, gently toss the mixed berries with granulated sugar, cornstarch, and lemon juice.
  6. Spread the berry mixture evenly over the crumble base.
  7. Crumble the remaining one-third of the mixture over the top of the berries.
  8. Bake for 30-35 minutes, or until the topping is golden brown and the berry filling is bubbly.
  9. Let the bars cool completely in the pan on a wire rack before cutting and serving.

Notes

  • If using frozen berries, do not thaw them before mixing.
  • For a less sweet crumble, reduce the brown sugar in the crumble mixture.
  • You can add a pinch of cinnamon to the crumble mixture for extra flavor.
