Make easy shredded beef in a slow cooker and serve it on buttery Hawaiian rolls topped with pickles for simple party sandwiches.

Ingredients

Scale
  • 3 pound beef chuck roast
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 (1 ounce) package dry ranch seasoning mix
  • 1 (0.25 ounce) package dry au jus gravy mix
  • 1 cup pepperoncini peppers, drained (reserve juice)
  • 1/2 cup butter, melted
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 package (12 count) Hawaiian sweet rolls
  • 1/2 cup sliced dill pickles

Instructions

  1. Place the beef roast in the bottom of a slow cooker.
  2. Pour the cream of mushroom soup, ranch seasoning mix, and au jus gravy mix over the roast.
  3. Add the drained pepperoncini peppers on top of the roast.
  4. Cook on low for 6 to 8 hours or on high for 3 to 4 hours until the beef is tender.
  5. Remove the roast from the slow cooker and shred it using two forks. Skim any excess fat from the liquid remaining in the slow cooker.
  6. In a small bowl, whisk together the melted butter, reserved pepperoncini juice, Worcestershire sauce, and Dijon mustard.
  7. Slice the Hawaiian rolls in half horizontally, keeping them connected.
  8. Place the shredded beef evenly over the bottom half of the rolls. Top the beef with the sliced dill pickles. Place the top half of the rolls back on.
  9. Pour the butter mixture evenly over the top of the rolls.
  10. Bake at 350 degrees Fahrenheit for 15 minutes, or until the tops are golden brown and the sandwiches are heated through.

Notes

  • You can shred the beef a day ahead and store it in the refrigerator. Reheat it with a few tablespoons of the cooking liquid before assembling the sliders.
  • If you need to keep the sliders warm for serving, place them on a baking sheet covered loosely with foil after baking and keep them in a 200 degree Fahrenheit oven for up to one hour.
