Simple shredded beef made from Mississippi Pot Roast, served on buttery Hawaiian rolls with pickle topping, perfect for game day or parties.

Ingredients

Scale
  • 3 lb beef chuck roast
  • 1 (1 oz) packet dry ranch seasoning mix
  • 1 (1 oz) packet dry au jus gravy mix
  • 1/2 cup pepperoncini peppers, sliced
  • 1/2 cup pepperoncini juice
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 (12 count) package Hawaiian sweet rolls
  • 1 cup dill pickle chips

Instructions

  1. Place the beef roast in the slow cooker.
  2. Sprinkle the ranch seasoning mix and au jus gravy mix over the roast.
  3. Pour the pepperoncini peppers and juice over the top.
  4. Cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the beef is easily shredded.
  5. Remove the roast from the slow cooker and shred it using two forks. Discard any large pieces of fat. Return the shredded beef to the slow cooker liquid and stir to coat.
  6. Preheat your oven to 350 degrees Fahrenheit.
  7. Slice the Hawaiian rolls in half horizontally, keeping the rolls connected. Place the bottom half in a 9×13 inch baking dish.
  8. Layer the shredded beef evenly over the bottom rolls. Top the beef with the dill pickle chips. Place the top half of the rolls over the pickles.
  9. In a small bowl, whisk together the melted butter, Worcestershire sauce, garlic powder, onion powder, and dried parsley.
  10. Pour the butter mixture evenly over the top of the rolls.
  11. Bake for 15 to 20 minutes, or until the tops are golden brown and the sandwiches are heated through.
  12. Slice the rolls into individual sliders before serving.

Notes

  • You can shred the beef and store it in the refrigerator up to 2 days ahead. Reheat gently in the slow cooker liquid before assembling the sliders.
  • To keep the sliders warm for a party, place them on a warming tray set to low after baking.
  • If you prefer less tang, use fewer pepperoncini peppers or substitute some of the juice with beef broth.
