Make a refreshing and zesty Mexican shrimp cocktail featuring cooked shrimp in a bright tomato and lime sauce with avocado and cilantro.

Ingredients

Scale
  • 1 pound cooked, peeled, and deveined medium shrimp, chilled
  • 1 cup tomato juice
  • 1/2 cup fresh lime juice
  • 1/2 cup ketchup
  • 1/4 cup finely chopped white onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup diced ripe avocado
  • 1/2 cup diced tomato (seeds removed)
  • 1/4 cup diced cucumber (seeds removed)
  • 1-2 tablespoons hot sauce (like Valentina or Cholula), adjust to taste
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup clamato juice (omit for Clamato-free version)

Instructions

  1. If your shrimp are large, cut them into bite-sized pieces. Place the shrimp in a large bowl.
  2. In a separate bowl, whisk together the tomato juice, lime juice, ketchup, hot sauce, Worcestershire sauce, salt, and pepper. Taste the mixture and adjust seasoning if needed.
  3. Pour the liquid mixture over the shrimp. Gently stir to coat.
  4. Add the chopped onion, cilantro, diced tomato, and diced cucumber to the shrimp mixture. Stir gently.
  5. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld. Do not chill for more than 4 hours, as the shrimp can become tough.
  6. Just before serving, gently fold in the diced avocado.
  7. Serve chilled in individual glasses or bowls, garnished with extra cilantro or a lime wedge.

Notes

  • You can use raw shrimp and poach them briefly in simmering, salted water until pink and cooked through, then immediately plunge them into ice water to stop the cooking process.
  • For a spicier kick, add finely minced jalapeño or serrano pepper to the sauce base.
  • Serve with saltine crackers or tortilla chips for dipping.
