Make a crispy, cheesy Mexican Pizza at home that tastes just like the fast-food favorite using seasoned ground beef, refried beans, and melted cheese between two fried tortillas.

Ingredients

Scale
  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 1 can (16 oz) refried beans, warmed
  • 8 small flour tortillas (about 6 inches each)
  • 1/2 cup vegetable oil for frying
  • 1 cup enchilada sauce (red or green)
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup sliced black olives
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
  2. Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the liquid reduces. Set aside.
  3. Heat the vegetable oil in a separate large skillet over medium-high heat.
  4. Carefully place one tortilla in the hot oil. Fry for 1 to 2 minutes per side until golden brown and crispy. Remove and place on a paper towel-lined plate to drain. Repeat with the remaining 7 tortillas.
  5. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  6. Place one crispy tortilla on a baking sheet. Spread half of the warmed refried beans evenly over the tortilla.
  7. Spoon half of the seasoned ground beef over the beans. Sprinkle with half of the shredded cheese.
  8. Top with a second crispy tortilla. Spread the remaining refried beans over this tortilla, followed by the remaining ground beef.
  9. Pour the enchilada sauce evenly over the top layer of beef.
  10. Sprinkle the remaining shredded cheese over the sauce.
  11. Bake for 8 to 10 minutes, or until the cheese is fully melted and bubbly.
  12. Remove from the oven. Top immediately with sliced black olives, diced tomatoes, and sliced green onions.
  13. Cut into wedges and serve hot.

Notes

  • For extra crispiness, you can bake the tortillas instead of frying them at 400 degrees Fahrenheit for about 8 minutes, flipping halfway through.
  • Use your favorite store-bought or homemade enchilada sauce for the best flavor.
  • You can substitute ground turkey or plant-based crumbles for the beef.
