Make these easy, flaky spinach and feta crisps, perfect for appetizers or a light snack. This recipe uses phyllo dough for a satisfyingly crispy texture.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 10 ounces fresh spinach, roughly chopped
  • 4 ounces crumbled feta cheese
  • 1 large egg, lightly beaten
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • 1 package (16 ounces) frozen phyllo dough, thawed according to package directions
  • 1/2 cup unsalted butter, melted

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until soft, about 5 minutes.
  2. Add the chopped spinach to the skillet. Cook until the spinach wilts completely and all the liquid evaporates. Remove from heat and let cool slightly.
  3. In a medium bowl, combine the cooled spinach mixture, crumbled feta cheese, beaten egg, nutmeg, and black pepper. Mix well.
  4. Prepare the phyllo dough according to package instructions. Keep the stack of dough covered with a damp towel to prevent drying.
  5. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
  6. Lay one sheet of phyllo dough on a clean surface. Brush the entire surface lightly with melted butter. Place a second sheet directly on top and brush it with butter. Repeat this process until you have a stack of four buttered sheets.
  7. Cut the stacked phyllo sheets into three equal strips lengthwise.
  8. Place about 1 tablespoon of the spinach and feta filling near one end of a strip. Fold the corner of the dough over the filling to form a triangle shape, then continue folding the dough over itself like folding a flag until you reach the end of the strip. Brush the finished triangle lightly with butter.
  9. Place the finished spinach and feta crisps seam-side down on the prepared baking sheet. Repeat the process with the remaining phyllo sheets and filling.
  10. Bake for 15 to 20 minutes, or until the crisps are golden brown and flaky. Serve warm.

Notes

  • If you prefer an air fryer spinach feta crisp, cook at 350°F (175°C) for 8 to 10 minutes, turning halfway through.
  • For a party appetizer, you can prepare these ahead of time and refrigerate them before baking. Add 5 minutes to the baking time if baking from cold.
  • This recipe makes excellent savory Greek pastries.
