Make authentic Maryland Crab Cakes that taste like they came straight from the Chesapeake Bay. We focus on using jumbo lump crab meat with minimal filler, seasoned perfectly with Old Bay, ensuring a juicy interior and a crisp, golden exterior. This recipe is our perfected project.

Ingredients

Scale
  • 2 lbs jumbo lump crab meat, picked over gently
  • 1/4 cup mayonnaise (high quality)
  • 1 large egg, lightly beaten
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon Old Bay Seasoning (or more, to taste)
  • 1/2 teaspoon black pepper
  • 1/4 cup saltine cracker crumbs (or panko breadcrumbs for a lighter texture)
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons unsalted butter or cooking oil, for pan-frying

Instructions

  1. In a small bowl, whisk together the mayonnaise, egg, Dijon mustard, Worcestershire sauce, lemon juice, Old Bay Seasoning, and black pepper. This is your binder mixture.
  2. Gently place the lump crab meat in a large bowl. Pour the binder mixture over the crab meat.
  3. Sprinkle the saltine crumbs and chopped parsley over the mixture.
  4. Using a rubber spatula, gently fold the ingredients together. Do not overmix; you want to keep the lumps intact.
  5. Divide the mixture into 6 or 8 equal portions. Gently form each portion into a thick patty, about 1.5 inches thick. Avoid compacting the mixture too much.
  6. Place the formed crab cakes on a plate lined with parchment paper. Refrigerate for at least 30 minutes to help them set.
  7. Heat the butter or oil in a large, non-stick skillet over medium heat until shimmering.
  8. Carefully place the crab cakes in the hot skillet, ensuring not to crowd the pan. You may need to work in batches.
  9. Pan-fry for 4 to 5 minutes per side until they are deeply golden brown and heated through.
  10. Serve immediately with lemon wedges and your favorite tartar sauce or remoulade.

Notes

  • For baking: Preheat oven to 400°F (200°C). Place crab cakes on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until golden brown.
  • If your crab meat is very wet, lightly pat it dry with paper towels before mixing to help the cakes hold their shape.
  • Jacob prefers using saltine crumbs for that classic Maryland binder flavor.
