Ingredients
Scale
1/4 cup low sodium soy sauce
2 tablespoons sesame oil
1 tablespoon fresh ginger, grated
1 clove garlic, minced
1 teaspoon brown sugar
1/2 teaspoon black pepper
1 pound tuna steaks (about 1 inch thick)
For Citrus Marinade: 1/4 cup fresh lime juice
For Citrus Marinade: 2 tablespoons olive oil
For Citrus Marinade: 1 tablespoon chopped fresh cilantro
For Citrus Marinade: 1/2 teaspoon cumin
For Herb Marinade: 3 tablespoons olive oil
For Herb Marinade: 1 tablespoon Dijon mustard
For Herb Marinade: 1 teaspoon dried oregano
For Herb Marinade: 1/2 teaspoon dried thyme
Instructions
Prepare the Asian Marinade: Whisk together soy sauce, sesame oil, ginger, garlic, brown sugar, and pepper in a shallow dish.
Prepare the Citrus Marinade: Whisk together lime juice, olive oil, cilantro, and cumin in a separate dish.
Prepare the Herb Marinade: Whisk together olive oil, Dijon mustard, oregano, and thyme in a third dish.
Place tuna steaks into your chosen marinade.
Cover the dish and refrigerate. Marinate for 15 to 30 minutes maximum for searing or grilling. Do not marinate for longer than 15 minutes if you plan to eat the tuna rare or raw, as the acid can begin to cure the fish.
Remove tuna from the marinade before cooking or serving. Discard the used marinade.
Cook or serve the tuna according to your preference.
Notes
For thicker tuna steaks (over 1.5 inches), you may extend marinating time up to 45 minutes.
Always pat the tuna dry with paper towels before searing to achieve a good crust.
If grilling, lightly oil the grates before placing the marinated tuna on the heat.
