- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons maple syrup
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cinnamon
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- In a large bowl, combine the cubed sweet potatoes, maple syrup, olive oil, salt, pepper, and cinnamon. Toss until the potatoes are evenly coated.
- Spread the coated sweet potatoes in a single layer on a large baking sheet lined with parchment paper. Do not overcrowd the pan.
- Roast for 25 to 30 minutes, flipping the potatoes halfway through the cooking time.
- The potatoes are done when they are tender when pierced with a fork and the edges are slightly caramelized.
- Serve immediately as a side dish.
Notes
- For extra crispiness, use a higher roasting temperature, like 425 degrees Fahrenheit, but watch closely to prevent burning the maple syrup.
- You can substitute brown sugar for maple syrup, but adjust the oil slightly if the mixture seems too dry.
- Add a pinch of cayenne pepper for a sweet and spicy flavor profile.
