Ingredients

Scale
  • 1 pound lean beef sirloin or tenderloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 medium yellow onion, thinly sliced
  • 8 ounces cremini mushrooms, sliced
  • 1 clove garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 cup low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup plain nonfat Greek yogurt
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 8 ounces egg noodles or brown rice (for serving)

Instructions

  1. Cook the noodles or rice according to package directions. Drain and set aside.
  2. Season the beef slices lightly with salt and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Brown the beef in batches, about 1-2 minutes per side. Remove the beef from the skillet and set aside.
  4. Reduce the heat to medium. Add the onion to the skillet and cook until softened, about 5 minutes.
  5. Add the mushrooms and thyme to the skillet. Cook until the mushrooms release their moisture and begin to brown, about 7-10 minutes.
  6. Add the minced garlic and cook for 1 minute until fragrant.
  7. Pour in the beef broth and Worcestershire sauce. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce slightly, about 3 minutes.
  8. Return the cooked beef to the skillet. Remove the skillet from the heat.
  9. In a small bowl, whisk together the Greek yogurt and lemon juice.
  10. Stir the Greek yogurt mixture into the beef and mushroom sauce. Heat gently over low heat for 1 minute, stirring constantly. Do not boil after adding the yogurt.
  11. Check the seasoning and add more salt and pepper if needed.
  12. Serve the Stroganoff immediately over the cooked noodles or rice. Garnish with fresh parsley.

Notes

  • For a tangier sauce, use a full-fat Greek yogurt.
  • Make sure the skillet is removed from direct heat before adding the yogurt to prevent curdling.
  • You can substitute lean ground beef for sliced beef if preferred, browning it first and draining any excess fat.
