Start your year fresh with this bright and flavorful Lemon Garlic Kale Salad. It’s a simple, detox-friendly bowl that proves healthy eating can be delicious. Amelia planned it, and Jacob made it perfect.

Ingredients

Scale
  • 1 large bunch kale (about 6 cups), stems removed and chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tablespoons toasted pine nuts or sunflower seeds
  • Salt and black pepper to taste

Instructions

  1. Massage the chopped kale with a drizzle of olive oil and a pinch of salt for two minutes. This softens the leaves.
  2. In a small bowl, whisk together the remaining olive oil, minced garlic, lemon juice, Dijon mustard, and honey or maple syrup to create the dressing.
  3. Pour the dressing over the massaged kale. Toss well to coat every leaf evenly.
  4. If using, fold in the Parmesan cheese.
  5. Sprinkle the toasted pine nuts or sunflower seeds over the salad before serving.
  6. Taste and adjust seasoning with more salt and pepper if needed.

Notes

  • For a deeper detox flavor, add 1/4 cup of finely chopped red onion.
  • If you skip the Parmesan, this salad remains vegan.
  • This salad tastes even better after sitting for 15 minutes, allowing the kale to absorb the dressing fully.
