This is a super simple, fast Lazy Lasagna Casserole. We skip boiling noodles and use frozen cheese ravioli to get that classic comfort food flavor in a fraction of the time. Jacob made this when I was too busy planning other things.

Ingredients

Scale
  • 1 (24 ounce) package frozen cheese ravioli
  • 1 (24 ounce) jar good quality marinara sauce
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 cup water
  • 1 (15 ounce) container ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese, plus extra for topping
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the marinara sauce, Italian seasoning, garlic powder, and water. Stir well.
  3. Add the frozen ravioli directly to the sauce mixture and toss gently to coat. Pour this entire mixture into the prepared baking dish.
  4. In a separate medium bowl, mix the ricotta cheese, egg, and 1/4 cup Parmesan cheese until smooth.
  5. Drop spoonfuls of the ricotta mixture evenly over the top of the sauce and ravioli layer. Do not stir them in.
  6. Sprinkle the mozzarella cheese evenly over the ricotta dollops and the rest of the dish.
  7. Bake for 30 to 35 minutes, or until the cheese is melted, bubbly, and lightly browned.
  8. Let the casserole rest for 5 to 10 minutes before serving. Garnish with fresh basil if you use it.

Notes

  • This recipe works well with any flavor of frozen ravioli you prefer, like meat or spinach.
  • For an extra meaty version, brown 1 pound of ground beef or Italian sausage and stir it into the marinara sauce before adding the ravioli.
  • If you do not have a 9×13 dish, a large oven-safe skillet works perfectly for this one-dish recipe.
