Make this easy, one-pan Keto Creamy Taco Skillet for a quick weeknight dinner. It features ground beef, taco seasoning, and cauliflower rice in a rich, creamy sauce.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 ounce) low-carb taco seasoning mix (or 2 tablespoons homemade mix)
  • 1 cup beef broth
  • 8 ounces cream cheese, cubed
  • 1/2 cup heavy cream
  • 1 bag (12 ounces) frozen cauliflower rice
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro, for garnish
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the taco seasoning mix. Cook for 1 minute, stirring constantly.
  4. Pour in the beef broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
  5. Reduce the heat to low. Add the cubed cream cheese and heavy cream. Stir until the cream cheese is fully melted and the sauce is smooth and creamy.
  6. Stir in the frozen cauliflower rice. Cover the skillet and let it cook for 5 to 7 minutes, or until the cauliflower rice is tender.
  7. Remove the lid. Stir in the shredded cheddar cheese until melted and incorporated. Season with salt and pepper as needed.
  8. Garnish with fresh cilantro before serving directly from the skillet.

Notes

  • If you prefer a thicker sauce, cook uncovered for a few extra minutes after adding the cauliflower rice.
  • Use your favorite low-carb taco seasoning blend to control sodium and spice levels.
  • For extra fat, you can substitute sour cream for the heavy cream, but add it at the very end off the heat to prevent curdling.
