Ingredients
Scale
4 boneless, skinless chicken breasts
4 ounces cream cheese, softened
1/2 cup shredded Monterey Jack cheese
1/4 cup heavy cream
1/4 cup chopped fresh jalapenos (seeds removed for less heat)
2 tablespoons chopped green onions
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil (for skillet method)
Instructions
Preheat your oven to 375 degrees Fahrenheit if baking, or prepare a large oven-safe skillet if using the skillet method.
In a medium bowl, combine the softened cream cheese, Monterey Jack cheese, heavy cream, chopped jalapenos, green onions, garlic powder, salt, and pepper. Mix until the filling is smooth and well combined.
If baking, use a sharp knife to cut a deep pocket into the side of each chicken breast, being careful not to cut all the way through.
Spoon the jalapeno popper mixture evenly into the pockets of the chicken breasts. Secure the opening with toothpicks if necessary.
For the skillet method: Heat the olive oil in the skillet over medium-high heat. Sear the stuffed chicken breasts for 3-4 minutes per side until golden brown. Transfer the skillet to the preheated oven.
Bake the stuffed chicken breasts (either directly on a baking sheet or in the oven-safe skillet) for 20 to 25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit and the chicken is cooked through.
Remove from the oven, let rest for 5 minutes before serving. Remove any toothpicks.
Notes
For a crispier topping, sprinkle 2 tablespoons of crushed pork rinds over the top of the stuffed chicken before baking.
Adjust the amount of jalapenos based on your preferred spice level. Wear gloves when handling the peppers.
If you prefer a saucier dish, reserve 2 tablespoons of the cream cheese mixture and stir it into 1/4 cup of extra heavy cream after the chicken is cooked. Pour over the finished chicken.
