Prepare a rich, savory, and low-carb pork tenderloin coated in a creamy garlic and herb sauce. This recipe is quick enough for a weeknight meal.

Ingredients

Scale
  • 1.5 lb pork tenderloin, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cloves garlic, minced
  • 0.5 cup chicken broth, low sodium
  • 1 cup heavy cream
  • 2 ounces cream cheese, cubed
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 Celsius).
  2. Season the pork tenderloin evenly with salt, pepper, thyme, and rosemary.
  3. Heat the olive oil in an oven-safe skillet over medium-high heat.
  4. Sear the pork tenderloin on all sides until nicely browned, about 2 to 3 minutes per side.
  5. Transfer the skillet to the preheated oven. Roast for 15 to 20 minutes, or until an internal temperature of 145 degrees Fahrenheit (63 Celsius) is reached.
  6. Remove the pork from the skillet and let it rest on a cutting board, tented with foil.
  7. Place the skillet back on the stovetop over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
  8. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  9. Reduce the heat to low. Whisk in the heavy cream and the cubed cream cheese until the sauce is smooth and the cream cheese has melted completely. Do not let the sauce boil rapidly.
  10. Stir in the fresh parsley. Taste the sauce and add more salt or pepper if needed.
  11. Slice the rested pork tenderloin into medallions and spoon the creamy garlic herb sauce over the top before serving.

Notes

  • To prevent the cream sauce from splitting, keep the heat low when adding the cream and cream cheese. Whisk gently and avoid boiling the sauce vigorously after adding dairy.
  • For a one-pan method, you can skip the oven step and cover the skillet after searing, reducing the heat to low and cooking until the pork reaches 145 degrees Fahrenheit internally, turning once.
  • Serve this dish with steamed asparagus or cauliflower mash for a complete keto meal.
