Ingredients
Scale
1 cup unsweetened almond milk
1/2 cup heavy whipping cream
2 tablespoons unsweetened cocoa powder
2 tablespoons natural, unsweetened peanut butter
1/4 medium avocado (optional, for extra thickness)
1 tablespoon MCT oil or melted coconut oil
2 tablespoons erythritol or monk fruit sweetener (adjust to taste)
1/2 teaspoon vanilla extract
1 cup ice cubes
Instructions
Place the almond milk, heavy cream, cocoa powder, peanut butter, avocado (if using), MCT oil, sweetener, and vanilla extract into a high-speed blender.
Add the ice cubes last.
Blend on high speed until the mixture is completely smooth and thick. Stop and scrape down the sides if necessary.
Taste the shake and add more sweetener if desired. Blend briefly to incorporate.
Pour immediately into a glass and serve.
Notes
For an even thicker shake, reduce the almond milk slightly or add 1/4 teaspoon of xanthan gum before blending.
Use natural peanut butter with no added sugar or oils for best keto compliance.
If you prefer a colder, ice-cream-like texture, use 1/2 cup of frozen heavy cream cubes instead of fresh cream and ice.
