Ingredients

Scale
  • 2 (20 ounce) cans young green jackfruit in brine or water, drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup barbecue sauce (your favorite kind)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Pinch of cayenne pepper (optional)
  • 4 sandwich buns
  • Coleslaw, for topping (optional)

Instructions

  1. Drain and rinse the jackfruit well. Squeeze out excess moisture. Remove any hard core pieces.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add the drained jackfruit to the skillet. Break apart the chunks lightly with a fork or your hands.
  5. Stir in vegetable broth, barbecue sauce, apple cider vinegar, brown sugar, smoked paprika, garlic powder, black pepper, and cayenne, if using.
  6. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 20 minutes, stirring occasionally. This allows the jackfruit to absorb the flavors.
  7. Remove the lid and continue to cook for another 10-15 minutes, stirring frequently, until most of the liquid has evaporated and the jackfruit shreds easily and looks caramelized. You want it moist but not watery.
  8. Taste the mixture and adjust seasonings if needed.
  9. Spoon the pulled jackfruit mixture generously onto the bottom halves of your sandwich buns.
  10. Top with coleslaw, if desired, and place the top bun on. Serve immediately.

Notes

  • Ensure you use young green jackfruit packed in water or brine, not ripe jackfruit in syrup.
  • Squeezing the water out of the jackfruit before cooking is important for texture.
  • Adjust the amount of barbecue sauce and brown sugar to match your preferred sweetness and tanginess.
  • This mixture reheats well and can be made ahead of time.
