This Velvety Italian Healing Soup offers the comfort of classic ‘penicillin soup’ with authentic Italian brightness. Jacob created this recipe to be restorative and easy to make when you need a warm, soothing meal. We achieve a creamy texture using puréed vegetables, brightened with fresh lemon and tiny pasta.

Ingredients

Scale
  • 6 cups Chicken Broth (low sodium)
  • 1 tablespoon Olive Oil
  • 1 medium Yellow Onion, chopped
  • 2 Carrots, peeled and chopped
  • 2 Celery Stalks, chopped
  • 2 cloves Garlic, minced
  • 1 cup small Pasta (Pastina or Ditalini)
  • 1/2 cup finely chopped Fresh Parsley
  • 1 large Lemon, juiced (about 3 tablespoons)
  • 1/2 teaspoon Dried Oregano
  • Salt and Black Pepper to taste
  • Optional: 1/2 cup cooked shredded Chicken

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  3. Add minced garlic and dried oregano. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes, or until vegetables are very tender.
  5. Carefully transfer the soup mixture (vegetables and broth) to a blender or use an immersion blender directly in the pot. Blend until completely smooth and velvety.
  6. Return the puréed soup to the pot over medium heat.
  7. Add the small pasta. Cook according to package directions, usually 6 to 8 minutes, until al dente. (Add shredded chicken now if using).
  8. Remove the pot from the heat. Stir in the fresh lemon juice and chopped parsley.
  9. Taste the soup and adjust seasoning with salt and pepper as needed. Serve immediately.

Notes

  • For extra richness, Jacob sometimes adds a small parmigiano rind while simmering the vegetables; remove before blending.
  • If you prefer a thicker soup, use one less cup of broth initially.
  • This soup tastes best when made fresh, but leftovers store well for up to three days.
