Follow this detailed guide to create authentic Nigerian Party Jollof Rice featuring a deeply flavored smoked pepper base and perfectly cooked, separate grains.

Ingredients

Scale
  • 3 cups long-grain parboiled rice
  • 1.5 lbs chicken or beef, cut into pieces
  • 4 large ripe plum tomatoes
  • 3 large red bell peppers (tatashe)
  • 2 scotch bonnet peppers (atarodo), adjust to heat preference
  • 1 large onion, roughly chopped
  • 1/2 cup tomato paste
  • 6 cups rich chicken or beef stock (preferably homemade)
  • 1/2 cup vegetable oil
  • 2 teaspoons dried thyme
  • 2 teaspoons curry powder
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • 1 tablespoon salt, or to taste
  • 1 teaspoon white pepper
  • 1 bouillon cube (Maggi or Knorr)
  • 1 small onion, thinly sliced for steaming

Instructions

  1. Season the meat with salt, pepper, thyme, and one bouillon cube. Boil the meat until tender, reserving the stock. Strain the stock and set aside 6 cups for the rice. Fry or grill the cooked meat until lightly browned; set aside.
  2. Prepare the pepper base: Blend the tomatoes, red bell peppers, scotch bonnets, and the roughly chopped onion until smooth.
  3. In a large pot, heat the vegetable oil over medium heat. Add the tomato paste and fry for 5-7 minutes, stirring constantly until it darkens slightly; this removes the raw, sour taste.
  4. Pour the blended pepper mix into the pot. Add the thyme, curry powder, smoked paprika, bay leaves, salt, and white pepper. Cook the sauce, stirring occasionally, until the water content evaporates and the oil begins to float on top (about 15-20 minutes). This concentrates the flavor.
  5. Pour 5 cups of the reserved stock into the pepper base. Bring to a boil. Taste and adjust seasoning now, as this is the final flavor profile for the rice.
  6. Wash the parboiled rice thoroughly until the water runs clear. Add the washed rice to the boiling sauce and stir well to coat every grain.
  7. Reduce the heat to low. Cover the pot tightly with aluminum foil first, then place the lid on top. This traps the steam needed to cook the rice evenly and develop the smoky flavor.
  8. Steam the rice for 25 minutes without opening the lid.
  9. After 25 minutes, gently stir the rice from the bottom up. If the rice is still hard, add the remaining 1 cup of stock, cover tightly again, and cook for another 10-15 minutes.
  10. For the smoky flavor, push some of the rice to the bottom of the pot and let it sit on low heat for 5 minutes without stirring.
  11. Stir in the sliced onion just before serving. Serve hot with your preferred side dishes.

Notes

  • For the best smoky flavor, roast the bell peppers and tomatoes slightly before blending.
  • Use long-grain parboiled rice; it holds its shape better than basmati or regular white rice for Jollof.
  • Do not stir the rice frequently while it is steaming; this releases starch and makes the rice mushy.
  • If you do not have homemade stock, use high-quality, low-sodium store-bought stock.
