Make a rich and flavorful Tuscan white bean soup quickly using your Instant Pot. This recipe features creamy cannellini beans, sun-dried tomatoes, and spinach.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup sun-dried tomatoes packed in oil, drained and chopped
  • 4 cups vegetable broth
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 1/2 cup water
  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 2 cups fresh spinach, packed
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and black pepper to taste

Instructions

  1. Set the Instant Pot to Sauté mode. Add olive oil. When hot, add the onion and cook until softened, about 4 minutes.
  2. Add the garlic, Italian seasoning, thyme, and red pepper flakes. Cook for 1 minute until fragrant. Press Cancel.
  3. Stir in the chopped sun-dried tomatoes, vegetable broth, rinsed cannellini beans, and water.
  4. Secure the lid and set the valve to Sealing. Cook on High Pressure for 5 minutes.
  5. When the cooking cycle finishes, perform a Quick Release of the pressure.
  6. Remove the lid. Stir in the heavy cream and Parmesan cheese, if using.
  7. Set the Instant Pot to Sauté mode (low setting). Stir in the spinach until it wilts, about 2 minutes.
  8. Use an immersion blender to blend about one-third of the soup directly in the pot until creamy. Alternatively, scoop out about 2 cups of soup, blend until smooth, and stir back into the pot.
  9. Taste and adjust seasoning with salt and pepper before serving.

Notes

  • For a thicker soup, mash some of the beans against the side of the pot before blending.
  • If you prefer a vegan option, substitute the heavy cream with full-fat coconut milk and omit the Parmesan cheese.
  • Rinsing the canned beans removes excess sodium.
