Make rich, creamy garlic butter potatoes quickly using your Instant Pot. This recipe delivers a flavorful side dish with minimal effort.

Ingredients

Scale
  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 1 cup chicken broth or water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Place the quartered potatoes, broth or water, salt, and pepper into the inner pot of your Instant Pot.
  2. Secure the lid and set the valve to the sealing position.
  3. Select Manual or Pressure Cook mode and cook on High Pressure for 6 minutes.
  4. Allow for a Natural Pressure Release (NPR) for 10 minutes, then carefully quick release any remaining pressure.
  5. Remove the potatoes and set them aside. Drain any excess liquid from the Instant Pot liner, leaving about 1/4 cup of liquid if desired for extra creaminess.
  6. Place the Instant Pot liner back on the heating element (use the Sauté function, Normal setting).
  7. Add the butter to the liner and let it melt. Add the minced garlic and cook for 1 minute until fragrant.
  8. Return the cooked potatoes to the pot. Mash the potatoes slightly with a potato masher directly in the pot, leaving some texture.
  9. Stir in the heavy cream and Parmesan cheese until the potatoes are coated and creamy. Cook for 1-2 minutes, stirring constantly, until heated through.
  10. Serve immediately, garnished with fresh parsley.

Notes

  • If you prefer a smoother texture, use an electric hand mixer to whip the potatoes after adding the cream and cheese.
  • For a dairy-free version, substitute the heavy cream with full-fat canned coconut milk and omit the Parmesan cheese.
  • If you do not have an Instant Pot, you can boil the potatoes on the stovetop until tender, then proceed with the butter and garlic sauce steps.
