Make a rich and creamy chicken tortellini soup quickly using your Instant Pot. This one-pot recipe is perfect for a fast weeknight dinner.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 4 ounces cream cheese, cubed
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach (optional)

Instructions

  1. Set the Instant Pot to ‘Sauté’ mode. Add olive oil. When hot, add chicken pieces and cook until lightly browned on all sides, about 4 minutes. Remove chicken and set aside.
  2. Add onion, carrots, and celery to the pot. Sauté until softened, about 3 minutes. Press ‘Cancel’ to stop sautéing.
  3. Return the browned chicken to the pot. Pour in the chicken broth. Add Italian seasoning, salt, and pepper.
  4. Secure the lid and set the vent to ‘Sealing’. Select ‘Manual’ or ‘Pressure Cook’ (High Pressure) for 5 minutes.
  5. When the cooking cycle finishes, allow a Natural Pressure Release (NPR) for 5 minutes, then carefully move the valve to ‘Venting’ for a Quick Release (QR) of any remaining pressure.
  6. Open the lid. Stir in the cubed cream cheese until it melts and the broth becomes creamy.
  7. Stir in the heavy cream and Parmesan cheese. Add the tortellini and cook on the ‘Sauté’ setting (low or normal) until the tortellini are cooked through, about 3 to 5 minutes, stirring often to prevent sticking.
  8. Stir in the fresh spinach until wilted, if using. Serve immediately.

Notes

  • For a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water before stirring it into the simmering soup in the final step.
  • You can use pre-cooked rotisserie chicken; add it during the last 5 minutes of simmering with the tortellini instead of cooking raw chicken at the start.
