Make this refreshing drink combining tart hibiscus tea, sweet strawberries, and bright lemonade for a perfect summer cooler.

Ingredients

Scale
  • 4 cups water
  • 1/2 cup dried hibiscus flowers (or 4 tea bags)
  • 1 cup fresh or frozen strawberries, hulled
  • 1/2 cup fresh lemon juice
  • 1/2 cup granulated sugar (adjust to taste)
  • 2 cups cold water (for dilution)
  • Ice cubes
  • Lemon slices and mint sprigs for garnish

Instructions

  1. Bring 4 cups of water to a boil in a saucepan. Remove from heat and add the dried hibiscus flowers or tea bags.
  2. Steep the hibiscus for 10 minutes. Strain the tea into a heatproof container and discard the flowers or bags. Let the concentrate cool to room temperature.
  3. While the tea cools, combine the strawberries and sugar in a small saucepan. Heat over medium heat, stirring until the sugar dissolves and the strawberries soften, about 5 minutes.
  4. Mash the strawberries gently with a fork or blend them briefly to create a thick syrup. Strain the strawberry syrup through a fine-mesh sieve into the cooled hibiscus concentrate, pressing down on the solids to extract all liquid. Discard solids.
  5. Stir the fresh lemon juice into the hibiscus-strawberry mixture. This is your base concentrate.
  6. To serve, fill glasses with ice. Pour approximately 1/2 cup of the base concentrate into each glass.
  7. Add 1/2 cup of cold water (or more, depending on desired strength) to each glass and stir well.
  8. Taste and adjust sweetness or tartness if needed. Garnish each glass with a lemon slice and a mint sprig.

Notes

  • For a low-sugar version, use a sugar substitute equivalent to 1/2 cup sugar in Step 3, or sweeten the final drink to taste with stevia or monk fruit drops.
  • If you prefer a stronger tea flavor, steep the hibiscus for 15 minutes.
  • To make this a pure lemonade variation, reduce the initial water by half and add more fresh lemon juice.
