Ingredients
Scale
1 teaspoon ceremonial grade matcha powder
2 tablespoons hot water (175°F / 80°C)
1 cup unsweetened pineapple juice, chilled
1/2 cup cold water or coconut water
1 tablespoon simple syrup or agave nectar (adjust to taste)
Ice cubes
Instructions
Sift the matcha powder into a small bowl or matcha bowl.
Add the 2 tablespoons of hot water to the matcha. Whisk vigorously with a bamboo whisk or a small electric frother until the mixture is smooth and frothy, with no clumps. This is your matcha concentrate.
In a tall glass, combine the chilled pineapple juice, cold water, and simple syrup. Stir well.
Fill the glass completely with ice cubes.
Slowly pour the prepared matcha concentrate over the top of the pineapple mixture. Do not stir immediately if you want a layered look.
Serve immediately. Stir before drinking to combine the flavors.
Notes
Use high-quality matcha for the best color and flavor.
If you prefer a less sweet drink, omit the simple syrup, as pineapple juice varies in sweetness.
For a caffeine-free version, substitute the matcha with spirulina powder, though the flavor will change.
To achieve a layered effect, ensure the pineapple mixture is very cold before pouring the matcha on top.
