Ingredients
Scale
1 pound ground beef (80/20 recommended)
1/2 cup breadcrumbs (panko or regular)
1/4 cup milk
1/4 cup finely chopped onion
1 large egg, lightly beaten
1 tablespoon Worcestershire sauce
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup ketchup (for glaze)
1 tablespoon brown sugar (for glaze)
1/2 teaspoon apple cider vinegar (for glaze)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin.
In a medium bowl, combine the breadcrumbs and milk. Let stand for 5 minutes to allow the breadcrumbs to soften.
Add the ground beef, chopped onion, egg, Worcestershire sauce, parsley, salt, and pepper to the breadcrumb mixture.
Gently mix all ingredients with your hands until just combined. Do not overmix.
Divide the meatloaf mixture evenly among the 12 muffin cups, pressing lightly to form small, compact loaves.
In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar for the glaze.
Spoon about 1 teaspoon of the glaze over the top of each meatloaf muffin.
Bake for 20 to 25 minutes, or until the internal temperature reaches 160°F (71°C).
Let the muffins cool in the tin for 5 minutes before carefully removing them.
For freezing: Let the muffins cool completely. Place on a baking sheet to flash freeze for an hour, then transfer to an airtight freezer bag. Reheat from frozen at 350°F (175°C) for about 30-35 minutes.
Notes
Using 80/20 ground beef gives you the best flavor and moisture.
For an extra savory touch, substitute half the ground beef with ground pork or veal.
If you prefer a less sweet glaze, omit the brown sugar completely.
These muffins freeze beautifully for quick weeknight meals.
