Make your own superior Teriyaki Sauce at home. This recipe is quick, simple, and tastes much better than any bottle you buy. Use it as a glaze or marinade for chicken, beef, tofu, or your favorite stir-fry.

Ingredients

Scale
  • 1/2 cup Soy Sauce
  • 1/2 cup Mirin (or substitute with dry white wine and 1 tablespoon sugar)
  • 1/4 cup Granulated Sugar (or brown sugar for deeper flavor)
  • 1 tablespoon Sake (optional)
  • 1 teaspoon Fresh Ginger, grated
  • 1 clove Garlic, minced
  • 1 tablespoon Cornstarch mixed with 2 tablespoons cold water (slurry)

Instructions

  1. Combine soy sauce, mirin, sugar, sake (if using), grated ginger, and minced garlic in a small saucepan.
  2. Heat the mixture over medium heat, stirring until the sugar dissolves completely. Do not boil.
  3. Bring the sauce to a gentle simmer.
  4. Slowly whisk in the cornstarch slurry.
  5. Continue to cook and whisk constantly until the sauce thickens enough to coat the back of a spoon. This takes about 1-2 minutes after adding the slurry.
  6. Remove immediately from the heat. The sauce will continue to thicken as it cools.
  7. Pour the finished teriyaki sauce into a clean jar.

Notes

  • This sauce works perfectly as a marinade for chicken or salmon.
  • For a thicker glaze, reduce the amount of water in the cornstarch slurry slightly.
  • Store leftovers in an airtight container in the refrigerator for up to two weeks.
  • Jacob prefers using brown sugar for a richer, more complex taste profile.
