A simple, comforting casserole that captures the classic Reuben sandwich flavors using corned beef, sauerkraut, Swiss cheese, and a buttery rye bread base, perfect for a weeknight dinner.

Ingredients

Scale
  • 1 (8 ounce) package refrigerated crescent roll dough
  • 1 pound cooked corned beef, shredded or chopped
  • 1 (16 ounce) can sauerkraut, drained well
  • 1 cup Thousand Island dressing
  • 1 cup Swiss cheese, shredded
  • 1/2 cup butter, melted
  • 1 teaspoon Dijon mustard
  • 1/2 cup rye bread cubes (about 2 slices)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Unroll the crescent roll dough and press it into the bottom of the prepared baking dish, sealing the seams to form a crust. Bake the crust for 8 minutes until lightly golden. Remove from the oven.
  3. In a large bowl, combine the drained sauerkraut, shredded corned beef, Thousand Island dressing, and Dijon mustard. Mix these ingredients until they are evenly coated.
  4. Spread the corned beef and sauerkraut mixture evenly over the partially baked crescent roll crust.
  5. Sprinkle the shredded Swiss cheese over the top of the meat and sauerkraut layer.
  6. In a small bowl, toss the rye bread cubes with the melted butter until coated. Sprinkle the buttered rye bread cubes over the cheese layer.
  7. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the topping is golden brown.
  8. Let the casserole rest for 5 minutes before cutting and serving.

Notes

  • Drain the sauerkraut thoroughly; excess liquid will make the casserole soggy. Press it between paper towels if needed.
  • You can substitute deli-sliced corned beef by chopping it finely before mixing.
  • For a richer flavor, use pumpernickel bread cubes instead of rye.
