Create the Ultimate Easy Homemade Reuben Bake Casserole. This recipe transforms the classic deli sandwich into a comforting, layered bake perfect for a satisfying weeknight dinner. You will layer corned beef, sauerkraut, Swiss cheese, and dressing over rye bread, resulting in a cheesy, tangy, and hearty meal.

Ingredients

Scale
  • 1 pound corned beef, chopped
  • 1 (16 ounce) can sauerkraut, drained well
  • 1 cup Thousand Island dressing
  • 8 slices rye bread, cubed
  • 1 tablespoon butter, melted
  • 8 ounces Swiss cheese, shredded
  • 1 tablespoon caraway seeds (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, gently toss the chopped corned beef and drained sauerkraut together.
  3. Spread half of the cubed rye bread evenly on the bottom of the prepared baking dish.
  4. Scatter half of the Swiss cheese over the bread layer.
  5. Spread half of the corned beef and sauerkraut mixture over the cheese.
  6. Drizzle half of the Thousand Island dressing over the mixture.
  7. Repeat the layers: remaining rye bread, remaining Swiss cheese, remaining corned beef and sauerkraut, and the rest of the dressing.
  8. Brush the top lightly with melted butter and sprinkle with caraway seeds, if using.
  9. Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese on top is melted and lightly golden.
  10. Let the bake rest for 5 minutes before you serve it.

Notes

  • Make sure you drain the sauerkraut very well to prevent a soggy bake.
  • You can use pastrami instead of corned beef for a slight flavor variation.
  • This bake reheats well the next day.
