- Rolled Oats: 4 cups
- Pecans, roughly chopped: 1 cup
- Maple Syrup: 1/2 cup
- Coconut Oil, melted: 1/4 cup
- Vanilla Extract: 1 teaspoon
- Ground Cinnamon: 1/2 teaspoon
- Salt: 1/4 teaspoon
- Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine the rolled oats and chopped pecans.
- In a separate small bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract.
- Pour the wet mixture over the oat and pecan mixture. Add the cinnamon and salt.
- Stir everything well until the oats are evenly coated.
- Spread the granola mixture in a thin, even layer onto the prepared baking sheet. Do not press down firmly.
- Bake for 30 to 35 minutes, stirring gently halfway through. You want the granola to be golden brown and fragrant.
- Remove from the oven and let the granola cool completely on the baking sheet. It will crisp up as it cools.
- Once cool, break up any large clusters. Store in an airtight container.
Notes
- For extra flavor, add 1/4 teaspoon of nutmeg with the cinnamon.
- If you prefer clusters, avoid stirring during the baking process until the last 10 minutes.
- This granola tastes great with yogurt or milk.
