Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 pound lean ground turkey
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (8 ounce) can tomato sauce
  • 1 (4 ounce) can diced green chilies
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion and bell pepper; cook until soft, about 5 minutes.
  3. Stir in garlic and cook for 1 minute more until fragrant.
  4. Add ground turkey to the pot. Break it up with a spoon and cook until browned. Drain off any excess fat.
  5. Stir in the kidney beans, black beans, diced tomatoes (with juice), tomato sauce, and green chilies.
  6. Add chili powder, cumin, oregano, salt, and pepper. Stir well to combine all ingredients.
  7. Bring the chili to a simmer. Reduce heat to low, cover, and let it cook for at least 30 minutes, stirring occasionally. For deeper flavor, simmer longer.
  8. Taste and adjust seasonings as needed before serving.

Notes

  • This chili freezes very well; cool completely before portioning into freezer-safe containers.
  • You can add a pinch of cayenne pepper if you prefer more heat.
  • Adjust the liquid content if you like your chili thicker or thinner.
