- Method: Simmering
- Cuisine: American

- 4 lbs of assorted bones (chicken, beef, or a mix)
- 1 large onion, quartered
- 2 carrots, roughly chopped
- 3 celery stalks, roughly chopped
- 4 cloves garlic, smashed
- 1/4 cup apple cider vinegar
- 1 tablespoon whole peppercorns
- 2 bay leaves
- 1 bunch fresh parsley
- 1 tablespoon sea salt (or to taste)
- Water to cover
- Place all bones in a large stockpot.
- Add the onion, carrots, celery, and garlic to the pot.
- Pour the apple cider vinegar over the ingredients. This helps draw minerals from the bones.
- Cover all ingredients completely with cold water, about 1 inch above the solids.
- Bring the water to a boil, then immediately reduce the heat to the lowest simmer setting.
- Skim off any foam or impurities that rise to the surface during the first hour.
- Add the peppercorns, bay leaves, parsley, and salt.
- Simmer, uncovered or partially covered, for at least 12 hours, or up to 24 hours. Keep the simmer very gentle.
- Check periodically and add more water if the liquid drops below the solids.
- Once simmering time is complete, turn off the heat.
- Carefully strain the broth through a fine-mesh sieve into a large bowl or container. Discard the solids.
- Let the broth cool slightly before transferring it to jars.
- Refrigerate until the fat solidifies on top, then skim the fat layer off if desired.
Notes
- Using a mix of marrow bones and joint bones gives the best gelatin content.
- If you want a darker beef broth, roast the beef bones at 400°F for 30 minutes before adding them to the pot.
- For the best flavor, use filtered water.
- Adjust salt at the end, after the broth has reduced.
