Ingredients
Scale
1 large bunch of kale (Lacinato or Curly), stems removed and chopped
1/2 cup grated Parmesan cheese (or nutritional yeast for dairy-free)
1/4 cup whole-wheat croutons
For the Dressing:
1/2 cup plain Greek yogurt (or cashew cream for vegan)
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 clove garlic, minced
1 teaspoon Worcestershire sauce (or soy sauce/tamari for vegetarian)
2 tablespoons olive oil
Salt and freshly ground black pepper to taste
Instructions
Prepare the kale: Rinse the kale well. Remove the tough stems. Chop the leaves into bite-sized pieces. Place the chopped kale in a large bowl.
Make the dressing: In a small bowl, whisk together the Greek yogurt, lemon juice, Dijon mustard, minced garlic, and Worcestershire sauce.
Slowly whisk in the olive oil until the dressing is smooth and emulsified. Season with salt and pepper.
Dress the kale: Pour about half of the dressing over the chopped kale. Use your hands to massage the dressing into the kale for about one minute. This softens the leaves.
Add toppings: Add the grated Parmesan cheese and croutons to the massaged kale. Toss gently to combine everything evenly.
Serve immediately. Add more dressing if you prefer a wetter salad.
Notes
Massaging the kale is key; it breaks down the tough fibers, making the salad much more tender and enjoyable.
You can prepare the dressing up to three days in advance and store it in the refrigerator.
For a complete meal, add grilled chicken or chickpeas.
