Ingredients
Scale
1 cup all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 large egg
3/4 cup milk (any kind)
1/2 cup plain Greek yogurt (full-fat or 2%)
2 tablespoons melted unsalted butter, plus more for the griddle
1 teaspoon vanilla extract
Instructions
Combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt in a large bowl. Whisk them together.
In a separate medium bowl, whisk the egg, milk, Greek yogurt, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients. Mix gently with a whisk or spatula until just combined. Do not overmix; a few small lumps are fine. Overmixing develops gluten and reduces fluffiness.
Heat a lightly oiled griddle or large non-stick skillet over medium heat. The pan is ready when a drop of water sizzles immediately.
Pour 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2 to 3 minutes per side. You know it is time to flip when bubbles appear on the surface and the edges look set.
Flip and cook for another 1 to 2 minutes until golden brown and cooked through.
Serve immediately with your preferred toppings.
Notes
For extra fluffiness, let the batter rest for 5 minutes before cooking.
If you want Blueberry Yogurt Pancakes, gently fold in 1/2 cup of fresh or frozen blueberries after mixing the batter.
For a Lemon Breakfast Recipe flavor, add the zest of one lemon to the wet ingredients.
