Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted light butter or coconut oil
  • 1 tablespoon sugar
  • 16 ounces non-fat plain Greek yogurt, softened
  • 1/2 cup granulated sugar substitute (like erythritol or stevia blend)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 325°F (160°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Mix graham cracker crumbs, melted butter, and 1 tablespoon sugar in a bowl. Press this mixture firmly into the bottom of the prepared pan. Bake for 10 minutes.
  3. While the crust bakes, prepare the filling. In a large bowl, beat the Greek yogurt and sugar substitute until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract, lemon zest, and cornstarch until just combined. Do not overmix.
  6. Pour the yogurt filling evenly over the warm crust.
  7. Bake for 30 to 35 minutes, or until the edges are set and the center has only a slight jiggle.
  8. Turn off the oven and prop the door open slightly. Let the cheesecake bars cool inside the oven for 1 hour. This prevents cracking.
  9. Remove from the oven and cool completely on a wire rack.
  10. Chill the bars in the refrigerator for at least 4 hours, or preferably overnight, before slicing and serving.

Notes

  • Using non-fat Greek yogurt keeps the calorie count down significantly.
  • The lemon zest brightens the flavor beautifully.
  • Ensure your Greek yogurt is at room temperature before mixing for a smoother batter.
  • For a clean cut, run a sharp knife under hot water before slicing the chilled bars.
