Make crispy, churro-flavored waffle sticks using a simple gluten-free batter. These are perfect for breakfast or a sweet snack.

Ingredients

Scale
  • 1 3/4 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1 1/2 cups milk (dairy or non-dairy)
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • For Coating: 1/2 cup granulated sugar
  • For Coating: 2 teaspoons ground cinnamon

Instructions

  1. Preheat your waffle iron. If you have a stick maker, use that. If not, prepare to cut standard waffles into sticks.
  2. In a large bowl, whisk together the gluten-free flour blend, 2 tablespoons sugar, baking powder, salt, and 1 teaspoon cinnamon.
  3. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix; a few small lumps are acceptable.
  5. Lightly grease the hot waffle iron plates. Pour the batter onto the iron according to your appliance’s directions.
  6. Cook until the waffle is golden brown and crisp, usually 4 to 6 minutes.
  7. Remove the waffle. If using a standard iron, immediately cut the cooked waffle into 3 or 4 sticks while it is still hot.
  8. In a shallow dish, mix the 1/2 cup sugar and 2 teaspoons cinnamon for the coating.
  9. While the waffle sticks are still warm, roll or toss them gently in the cinnamon-sugar mixture until fully coated.
  10. Serve immediately. For extra flavor, prepare a simple vanilla glaze for dipping.

Notes

  • For extra crispy waffles, let the batter rest for 5 minutes before cooking.
  • If your gluten-free flour blend does not contain xanthan gum, add 1 teaspoon to the dry ingredients.
  • To make a simple vanilla glaze, mix 1 cup powdered sugar with 2 tablespoons milk and 1/2 teaspoon vanilla extract until smooth.
