Make rich, fudgy brownies that are completely gluten-free and feature a creamy peanut butter ribbon swirled through the chocolate batter.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 3/4 cups granulated sugar
  • 3/4 cup packed light brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup gluten-free all-purpose flour blend (with xanthan gum)
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 2 tablespoons milk (dairy or non-dairy)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until combined.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate medium bowl, whisk together the gluten-free flour blend, cocoa powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. Fold in the chocolate chips.
  6. In a small bowl, prepare the swirl mixture: beat the peanut butter, powdered sugar, and milk until smooth and creamy.
  7. Spread half of the brownie batter evenly into the prepared pan.
  8. Dollop spoonfuls of the peanut butter mixture over the batter. Spread the remaining brownie batter over the peanut butter layer.
  9. Use a knife or skewer to gently swirl the peanut butter mixture through the chocolate batter to create a marbled effect.
  10. Bake for 30 to 35 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
  11. Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang and cutting them into squares.

Notes

  • Use a gluten-free flour blend that already contains xanthan gum for the best fudgy texture.
  • For cleaner swirls, chill the peanut butter mixture slightly before using it.
  • Do not overbake; these brownies are best when slightly underdone for a fudgy center.
