Ingredients

Scale
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1/4 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1/2 cup gluten-free all-purpose flour blend (with xanthan gum)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon maple syrup (optional, for batter)
  • Butter or oil for the griddle

Instructions

  1. Combine the mashed bananas, eggs, milk, and vanilla extract in a medium bowl. Whisk until smooth.
  2. In a separate bowl, mix the gluten-free flour blend, baking powder, and salt.
  3. Gradually add the dry ingredients to the wet ingredients. Mix gently until just combined. Do not overmix. If using, stir in the maple syrup.
  4. Heat a lightly oiled griddle or non-stick pan over medium heat.
  5. Pour 1/4 cup of batter per pancake onto the hot griddle.
  6. Cook for 2-3 minutes per side, until bubbles appear on the surface and the edges look set. Flip carefully.
  7. Cook the second side until golden brown.
  8. Serve immediately with your favorite toppings.

Notes

  • Ensure your bananas are very ripe for the best sweetness and texture.
  • If your gluten-free flour blend does not contain xanthan gum, add 1/4 teaspoon to the dry ingredients.
  • Adjust the heat to prevent burning; a medium setting works best for these pancakes.
