Make rich, fudgy brownies using Greek yogurt for a high-protein, low-calorie treat, keeping each serving under 100 calories.

Ingredients

Scale
  • 1/2 cup non-fat plain Greek yogurt
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup granulated zero-calorie sweetener (like erythritol or stevia blend)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour or oat flour
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 tablespoon dark chocolate chips (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together the Greek yogurt, egg, and vanilla extract until smooth.
  3. Add the zero-calorie sweetener and cocoa powder to the wet ingredients. Mix well until fully combined and no lumps remain.
  4. In a separate small bowl, whisk together the flour, baking powder, and salt.
  5. Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix; a few small streaks of flour are acceptable.
  6. Spread the batter evenly into the prepared pan. Sprinkle the optional chocolate chips over the top.
  7. Bake for 18 to 22 minutes. The center should look set but still slightly moist for a fudgy texture.
  8. Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  9. Cut into 9 equal squares. Allow them to chill in the refrigerator for at least 30 minutes before serving for the best fudgy texture.

Notes

  • Chilling the brownies after baking is crucial for achieving a dense, fudgy texture rather than a cakey one.
  • For a richer chocolate flavor, use Dutch-processed cocoa powder.
  • If you use oat flour, ensure it is finely ground.
