Enjoy these incredibly fudgy date brownies. Jacob perfected this recipe to deliver deep chocolate flavor and a rich texture using Medjool dates for natural sweetness. This recipe offers a decadent treat without refined sugar.

Ingredients

Scale
  • 1 cup Medjool dates, pitted and packed
  • 1/2 cup hot water
  • 1/2 cup cocoa powder, unsweetened
  • 1/2 cup almond butter (or peanut butter)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional, for folding in and topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Place the pitted dates in a heatproof bowl and cover them with the hot water. Let them soak for 10 minutes to soften.
  3. Transfer the softened dates and the soaking water to a food processor or high-speed blender. Process until a smooth, thick paste forms. You must achieve a smooth consistency.
  4. Add the cocoa powder, almond butter, eggs, vanilla extract, and salt to the food processor with the date paste. Blend until the batter is completely smooth and well combined. Scrape down the sides as needed.
  5. If using, gently fold in half of the chocolate chips by hand.
  6. Spread the batter evenly into the prepared baking pan. Sprinkle the remaining chocolate chips over the top.
  7. Bake for 22 to 25 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
  8. Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment overhang. Cooling is essential for achieving the fudgy texture.
  9. Cut into squares and serve.

Notes

  • For the best fudgy texture, use Medjool dates; they have a higher moisture content.
  • If your batter seems too thick before baking, add one teaspoon of water at a time until it mixes smoothly.
  • Jacob suggests using high-quality, dark cocoa powder for the deepest chocolate taste.
  • If you prefer a cake-like texture, bake for an additional 3-5 minutes.
