Ingredients
Scale
4 cups fresh peaches, pitted and sliced
1 cup tequila
1/2 cup fresh lime juice
1/4 cup orange liqueur (like Triple Sec or Cointreau)
1/4 cup granulated sugar, or to taste
1/4 cup water
Pinch of salt
Instructions
Combine sugar and water in a small saucepan. Heat gently, stirring, until sugar is dissolved. Let it cool completely.
In a blender, combine the sliced peaches, cooled sugar syrup, tequila, lime juice, orange liqueur, and salt.
Blend until smooth.
Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
If you don’t have an ice cream maker, pour the mixture into a shallow freezer-safe container. Freeze for 1 hour, then scrape with a fork to break up ice crystals. Repeat this every hour for 3-4 hours, or until firm.
Transfer the sorbet to an airtight container and freeze until solid.
Notes
For a non-alcoholic version, omit the tequila and orange liqueur. You can add a bit more lime juice or a splash of peach nectar.
Adjust the sweetness to your preference by adding more or less sugar.
