Amelia and Jacob from Taste Portfolio share this collection piece, perfect for planners and creative cooks alike.

Ingredients

Scale
  • 1 loaf day-old bread (cubed)
  • 4 large eggs
  • 1 cup milk (any kind)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (plus extra for topping)
  • 2 tablespoons granulated sugar (plus extra for topping)
  • 1/4 teaspoon baking powder (optional, for lift)
  • Butter or non-stick spray for greasing

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin well.
  2. Cube the bread into bite-sized pieces and place them evenly into the prepared muffin cups.
  3. In a medium bowl, whisk together the eggs, milk, vanilla extract, 1/2 teaspoon cinnamon, 2 tablespoons sugar, and baking powder (if using). Whisk until completely combined.
  4. Pour the egg mixture evenly over the bread cubes in each muffin cup. Gently press the bread down to soak up the liquid. Let this sit for 5-10 minutes.
  5. In a small bowl, mix 1/4 cup granulated sugar with 1 teaspoon of cinnamon for the topping.
  6. Sprinkle a generous amount of the cinnamon sugar topping over each muffin cup.
  7. Bake for 18-22 minutes, or until the tops are golden brown and the center is set.
  8. Let the muffins cool in the tin for a few minutes before carefully removing them. Enjoy warm or store them for later.

Notes

  • Using slightly stale or day-old bread helps prevent the muffins from becoming soggy.
  • For a richer flavor, use half-and-half instead of all milk.
  • These freeze well. Cool completely, then store in an airtight container for up to one month.
  • Jacob suggests adding a pinch of nutmeg to the wet mixture for extra depth.
