Ingredients
Scale
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 scoop vanilla protein powder
1 tablespoon ground cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
1 large egg
1 cup milk (dairy or non-dairy)
1 teaspoon vanilla extract
1 tablespoon melted coconut oil or butter (plus more for the griddle)
Instructions
In a large bowl, whisk together the flours, protein powder, cinnamon, baking powder, and salt. You have completed the dry ingredient organization step.
In a separate medium bowl, whisk the egg, milk, vanilla extract, and melted coconut oil or butter. This is the wet ingredient preparation.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are acceptable. This keeps them fluffy.
Heat a lightly oiled griddle or non-stick pan over medium heat. Jacob handles this part with his intuitive touch.
Pour 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2-3 minutes per side, or until bubbles form on the surface and the edges look set. Flip carefully.
Serve immediately with your favorite toppings. Enjoy the finished project!
Notes
For extra fluffiness, let the batter rest for five minutes before cooking.
Adjust milk slightly if your protein powder is very absorbent.
Top with Greek yogurt and fresh berries instead of syrup for a lower sugar option.
