Ingredients
Scale
6 English Muffins, torn into pieces
2 cups Milk (whole or 2%)
1/2 cup Granulated Sugar
2 large Eggs
1 teaspoon Vanilla Extract
1/2 teaspoon Ground Cinnamon
Pinch of Salt
2 tablespoons Butter, melted (for topping or greasing)
Instructions
Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish with butter.
Arrange the torn English muffin pieces evenly in the prepared baking dish.
In a large bowl, whisk together the milk, sugar, eggs, vanilla extract, cinnamon, and salt until well combined.
Pour the milk mixture evenly over the English muffins, pressing down gently so the muffins absorb the liquid. Let it sit for 10 minutes.
Drizzle the melted butter over the top of the pudding.
Bake for 35 to 40 minutes, or until the top is golden brown and the center is set.
Let it cool for 5 minutes before serving warm.
Notes
You can add raisins or chocolate chips to the mixture before baking for extra flavor.
Serve immediately with maple syrup or a dusting of powdered sugar.
If your muffins are very fresh, let them sit out for an hour to dry slightly before using.
