- 1 cup chopped cooked ham or turkey bacon
- 1/2 cup shredded cheddar cheese

- Carefully pour the egg mixture over the fillings in each cup, filling them about three-quarters full.
- Bake for 15 to 18 minutes, or until the egg cups are set and lightly golden brown.
- Let the egg muffin cups cool in the tin for 5 minutes before carefully removing them with a small offset spatula or knife.
- Serve warm or cool completely for meal prepping.
Notes
- For freezer storage, place cooled egg bites in an airtight, freezer-safe container or bag. They keep well for up to one month.
- To reheat, microwave one or two cups for 30 to 60 seconds until heated through.
- Feel free to substitute your favorite low carb breakfast additions like mushrooms or different cheeses.
