Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup low-sodium soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1/4 cup low-sugar teriyaki sauce (check label for carb count)
  • 1 teaspoon cornstarch or arrowroot powder mixed with 1 tablespoon cold water (slurry)
  • 4 cups crisp lettuce cups (such as butter or iceberg)
  • 1 tablespoon vegetable oil
  • Optional garnish: sliced green onions, sesame seeds

Instructions

  1. Combine soy sauce, rice vinegar, sesame oil, grated ginger, and minced garlic in a small bowl. This is your marinade base.
  2. Add the chicken pieces to the marinade. Toss to coat well. Let it sit for at least 10 minutes while you prepare the rest.
  3. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the marinated chicken to the hot skillet, discarding any excess marinade. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  5. Pour the low-sugar teriyaki sauce over the chicken. Stir to combine.
  6. Stir the cornstarch/arrowroot slurry once more, then pour it into the skillet. Cook, stirring constantly, until the sauce thickens slightly, about 1 minute.
  7. Remove the skillet from the heat.
  8. Spoon the teriyaki chicken mixture evenly into the crisp lettuce cups.
  9. Garnish with green onions and sesame seeds, if using. Serve immediately.

Notes

  • Jacob suggests using chicken thighs for extra moisture if you are not strictly counting fat content.
  • Taste the sauce before adding the slurry; adjust soy sauce for saltiness or vinegar for tang.
  • For a full meal, serve alongside steamed broccoli or cauliflower rice.
