Prepare a fresh, simple salad featuring strawberries and avocado, topped with a bright citrus vinaigrette dressing.

Ingredients

Scale
  • 4 cups mixed greens
  • 1 pint fresh strawberries, hulled and sliced
  • 2 ripe avocados, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup toasted pecans or walnuts (optional)
  • For the Vinaigrette: 1/4 cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 1 tablespoon Dijon mustard
  • 1/2 cup olive oil
  • 1 tablespoon honey or maple syrup
  • Salt and black pepper to taste

Instructions

  1. Prepare the vinaigrette: In a small bowl, whisk together the orange juice, lime juice, and Dijon mustard.
  2. Slowly drizzle in the olive oil while continuously whisking until the dressing emulsifies.
  3. Stir in the honey or maple syrup, then season with salt and pepper. Set aside.
  4. Assemble the salad: In a large bowl, combine the mixed greens, sliced strawberries, diced avocado, and sliced red onion.
  5. If using, sprinkle the toasted nuts over the salad ingredients.
  6. Just before serving, drizzle the citrus vinaigrette over the salad. Gently toss to coat all ingredients evenly.

Notes

  • You can prepare the vinaigrette up to two days ahead and store it in the refrigerator. Let it come to room temperature before using.
  • To keep the avocado from browning if making ahead, toss it lightly with a small amount of the citrus juice before adding it to the salad.
  • Use a sharp knife to slice the strawberries uniformly for better presentation.
